Hey friends! So, I decided to make this for the very first time. I spent a while trying to configure my usual pancake recipe (yes, I am a lover of pancakes)! It turned out super yummy!π

The green colour didnβt turn out quite as planned but hey ho! I didnβt want to ruin the taste completely – is there such a thing as too much π?! Enjoy a little video of me making the pancakes on YouTube – link here. Secret ingredients: smiles and dancing! πΈ

INGREDIENTS:
60g (ish) oat flour
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp sweetener
1 banana
100ml almond milk
1 tsp vanilla extract
1/4 tsp matcha powder
Chia egg:
1 tbsp chia seeds
2 1/2 tbsp water
Toppings (of your choice):
Berries
Maple syrup
DIRECTIONS:
Step 1: In a bowl, whisk together the oat flour, baking powder & baking soda, sweetener, cinnamon, and nutmeg.
Step 2: For the chia egg, separately grind the chia seed and water mixture until the seeds are completely ground.
Step 3: In a separate bowl, mash the banana until purΓ©ed. Add the almond milk, vanilla extract, matcha powder and chia egg (see step 2) and whisk until smooth.
Step 4: Add the wet ingredients to the dry mixture and whisk until smooth. It doesnβt need to be perfect!
You may need to adjust if too runny (add flour( or too thick (add milk). Remember it needs to be pipe-able π
Step 5: Heat a large non-stick pan over medium heat and lightly grease with oil.
Step 6: Pour the batter into a piping bag (or squeeze bottle). And then pipe small mini pancakes onto it. Cook for about 45 seconds, or until the top starts to create bubbles. Flip and cook the other side, until the pancakes are golden-brown on both sides.
Step 7: Serve with your favourite toppings and enjoy! ππ
